The four hundred years since colonization have brought European, African and Asian techniques, ingredients and tastes to the Chesapeake Bay. Waves of immigrants brought their own cuisines to the mix, and colcannon, brisket, sauerkraut and fish peppers are now found on Chesapeake tables.
