Stumbling across a more than 30 year old "Maryland Seafood Cookbook" originally published by the Maryland Seafood Authority (a state agency), we leafed through and found this amazing recipe for Crab Critter Fritters. We've made the recipe twice, once as instructed by deep frying, resulting in golden puffy crab goodness and the second time we tried pan frying, sort of like a potato pancake, sans potato. Both were amazing!

Feel free to adjust the recipe to your taste. Easy to deep dry or pan fry.

Add Old Bay to taste, use your favorite biscuit or pancake mix (we like Kodiak Power Cakes Pancake Mix with all the extra protein).
Use a little mayo or sour cream mixed with Old Bay to make a dipping sauce.
